This version spices the apples with cinnamon and bakes them with a classic sponge topping that is light and fluffy.
This is a great dessert, served hot with custard.
Spiced Eve's Pudding
Serves: 6-8Ingredients:
For the Filling:
675g (1 1/2 lbs) cooking apples, peeled and cored50g (1/4 cup) sugar
1 tsp ground cinnamon
For the Sponge:
100g (3 1/2 oz) self-raising flour1 tsp baking powder
100g (3 1/2 oz) butter
100g (3 1/2 oz) caster sugar
2 medium eggs, beaten
Method:
Thinly slices the apples and layer in the base of a greased 1 1/2l (6 cup) ovenproof dish. Scatter sugar and cinnamon over each layer as you add them. Set aside as you prepare the sponge.For the sponge, sift together the flour and baking powder into a large bowl. Add the butter, sugar and eggs then cream together with an electric whisk for a few minutes, until light and fluffy.
Spoon the sponge mix evenly over the apples, ensuring that they are completely covered. Transfer to an oven pre-heated to 180ºC (350ºF, Gas Mark 6) and bake for about 40 minutes, or until the sponge is golden brown and firm to the touch.
Serve hot, accompanied by custard.
