Orange and Kiwi Fruit Cheesecake Recipe

This is a classic vegetarian recipe for a no-bake cheesecake flavoured with orange, almonds and kiwi fruit.

Easy to make and delicious with all the fruit this makes a great tea-time treat but is good enough to serve at the close of a dinner party.

Orange and Kiwi Fruit Cheesecake

Serves: 6–8
Orange and kiwi fruit cheesecake: a classic no-bake cheesecake

Ingredients:

For the Base:

100g (1/2 cup) margarine
225g (8 oz) wholemeal digestive biscuits (graham crackers), crushed

For the Topping:

450g (1 lb) soft cheese (eg Quark)
100g (1/2 cup) margarine
1 medium egg, beaten
finely-grated zest of 1 orange
flesh of 1 orange, chopped
25g (1 oz) ground almonds
1/4 tsp almond essence
2 kiwi fruit, peeled
Method:
Begin with the base. Melt the margarine in a pan, add the biscuit crumbs and mix well to combine.

Press the resultant mixture into the base and up the sides of a flan dish. Press the crumb mixture into the sides of the pan then set aside to chill thoroughly.

In the meantime, combine the cream cheese, margarine, egg, chopped orange flesh and orange zest in a bowl with the almonds and almond essence. Chop one of the kiwi fruit and mix this in as well.

Turn this mixture over the crumb base and smooth over the top. Slice the other kiwi fruit and use to garnish the top of the cheesecake.

Set in the refrigerator to chill for at least 2 hours before slicing into wedges and serving.
