Black Forest Instant Pudding Recipe

This is an American recipe for a dessert made from a blend of black cherries and instant chocolate pudding mix. You can obviously buy the instant pudding mix, but you can also prepare your own substitute at home, using this home-made instant chocolate pudding mix recipe.

I'm not normally a big fan of these instant puddings, but this recipe somehow tickled my fancy, so I am presenting it here today.

Black Forest Instant Pudding

Serves: 6
Black forest instant pudding, served in a bowl and topped with fresh cherries

Ingredients:

425g (15 1/2 oz) tin pitted black cherries, drained
225g (8 oz) packet of instant chocolate pudding mix (or use this recipe for home-made instant chocolate pudding mix)

Method:

Brush a deep 20cm (8 in) diameter ovenproof dish with melted butter or oil.

Sit the cherries in the base of the dish then prepare the chocolate pudding according to the instructions on the packet. (if using my own instant pudding substitute, then take 1 batch of the pudding mix and whisk with 500ml [2 cups] water and 1/4 tsp vanilla extract).

Pour the pudding mix over the dark cherries and smooth the top. Transfer to an oven pre-heated to 180ºC (350ºF, Gas Mark 4) and bake for about 25 minutes, or until a skewer inserted into the centre of the pudding emerges cleanly.

Serve hot, accompanied by vanilla custard.
