Spiced Sausage and Bean Hotpot Recipe

Easter is now over, so here is something warm and comforting to get you through the week ahead.

Sometimes you just need a little comfort food that is tasty and filling, but not too expensive to prepare and this sausage and bean hotpot recipe fits the bill admirably:


Spiced Sausage and Bean Hotpot

Serves: 4
Spicy Sausage and Bean Hotpot: Classic hotpot of chipolata sausages and beans in a spicy tomato base

Ingredients:

2 tbsp sunflower oil
8 pork chipolatas
1 onion, sliced
89g pepperoni sausage, chopped
1 tbsp tomato purée
1 tin (400g [14 oz]) chopped tomatoes
2 tsp cumin seeds
2 tsp dried coriander
1 tbsp Worcestershire sauce
400g (14 oz) tin of cannellini beans, drained

Method:

Heat the oil in a flame-proof casserole then add the chipolata sausages and fry for 10 minutes, or until nicely browned all over.

Add the onion and cook for 3 minutes, or until just soft. Now add the pepperoni, tomato purée, tomatoes and spices. Bring to a simmer, cover and cook for 10 minutes.

Finally add the Worcestershire sauce and the beans. Stir well to combine, bring back to a simmer and cook for 10 minutes more.

Serve hot, accompanied by mashed potatoes.
