Summer Fruit Crumble Recipe

Despite the fairly abysmal weather outside, it is officially spring now, so to get you in the mood for the coming season here is a classic crumble recipe (nice and warming) but using summer fruit of various kinds as the base.

Think of it as a warming dessert dish that will give you the flavours of summer to help look forward to the seasons ahead!


Summer Fruit Crumble

Serves: 6
Summer fruit crumble in an earthenware dish.

Ingredients

For the Fruit:

800g (1 1/2 lbs, just over) frozen summer fruit
2 tbsp cornflour (cornstarch)
2 tbsp water
2 tbsp sugar

For the Crumble Topping:

100g (3 1/2 oz) plain flour
50g (2 oz) butter
25g (1 oz) ground almonds
50g (2 oz) golden caster sugar
25g (1 oz) flaked almonds

Method:

Place the fruit in a pan and gently heat through. In the meantime mix the cornflour (cornstarch) with the water and sugar to a smooth slurry. Add this mixture to the fruit then bring to a boil and cook until thickened.

Take off the heat and divide the fruit mixture between 6 individual, greased, ovenproof dishes (medium-sized ramekins are ideal).

For the crumble topping, rub the butter into the flour until the mixture resembles breadcrumbs, then stir in the ground almonds and sugar.

Sprinkle the resultant crumble mix over the fruit (dividing evenly) then sprinkle over the flaked almonds.

Sit on a baking tray and transfer to an oven pre-heated to 170ºC (340ºF, Gas Mark 5) and bake for between 30 and 35 minutes, or until the crumble is golden.

Serve hot, accompanied by custard.
