Marshmallow Cupcakes Recipe

Yes, I know I have been adding lots of cupcake recipes... I'm still just a little bit in my baking craze. But lots of the ones I have added so far have been for grown-ups in one way or another.

So, today, here's a recipe specifically for the kids (of course, you do not have to be a little kid to enjoy these!).


Marshmallow Cupcakes

Serves: 20

Of late, I have been adding lots of recipes for grown ups, so to redress the balance a little here is a cupcake recipe that is sure to be a hit with the kids. These can also easily be made gluten-free, simply replace the plain flour with a gluten-free baking mix.

Ingredients:

150g (5 oz) butter
300g (2/3 lb) caster sugar
3 eggs, beaten
250ml (1 cup) milk
225g (1/2 lb) plain flour
pinch of salt1 tsp bicarbonate of soda
50g (2 oz) cocoa powder

For the Topping:

125g (4 oz) plain chocolate (at least 60% cocoa solids)
150g (5 oz) butter
125g (4 oz) icing sugar, sifted
1 tsp vanilla extract
125g (4 oz) plain chocolate, roughly chopped (to decorate)
125g (4 oz) chopped walnuts
mini marshmallows

Method:

Cream together the butter and sugar in a bowl until pale and fluffy then beat in the eggs, one at a time before beating in the milk. Sift together the flour, salt, bicarbonate of soda and cocoa powder into a separate bowl. Add this to the liquid ingredients and stir to combine.

Line 20 wells from two 12-hole muffin tins with paper cupcake cases and spoon the batter into these. Transfer to an oven pre-heated to 180ºC (350ºF, Gas Mark 4) and bake for 15 minutes, or until a cocktail stick inserted into the centre emerges cleanly. Allow to cool in the tin for 5 minutes then transfer to a wire rack to cool completely.

For the frosting (icing) melt the chocolate in a heat-proof bowl, either in a microwave or over a pan of barely-simmering water. When melted and smooth remove from the heat and set aside to cool to room temperature.

Beat the butter in a bowl until smooth and creamy. Add the sugar and beat until light and fluffy. Add the vanilla and melted chocolate and beat gently until incorporated. Now beat faster until the mixture is smooth and glossy.

Spread the resultant frosting onto the tops of the cakes then decorate with the chopped chocolate, the walnuts and the mini marshmallows (or any other sweets [candies] that your children particularly like).
