Summer Fruit Ice Yoghurt Recipe

If you fancy something just a little bit lighter, then this is a really brilliant dessert. Light and healthy, whilst being easy to make it's also delicious and looks good when served.

Excellent outside for a barbecue it's just as good to end a family meal or can be served as a lighter kind of dessert to end a dinner party. I've even had this for breakfast!


Summer Fruit Ice Yoghurt

Serves: 4
Summer fruit ice yoghurt dessert, served in a dessert glass topped with fruit.

Ingredients:

500g (1 lb) frozen mixed summer fruit
400g (14 oz) Greek yoghurt
100ml (2/5 cup) fresh orange juice
1 tbsp icing sugar
amaretti, shortbread or almond thin biscuits (cookies) to serve

Method:

Combine the frozen fruit, yoghurt, orange juice and icing sugar in a food processor. Pulse the mixture until blended then scrape the mixture from the sides of the food processor and pulse again. Repeat this process until the mixture resembles frozen yoghurt.

Spoon the yoghurt mix into tall glasses and serve immediately, accompanied by the biscuits.
