Mixed Fruit Kebabs Recipe

As anyone who had mixed seafood and fruit to cook on a barbecue knows it's not just vegetables, meat and various savoury foods that you can cook on a grill. A barbecue can be far more versatile than that. You can even prepare dessert on a barbecue!

These mixed fruit kebabs are probably one of the simplest sweet dishes you can char-grill. But they're no less delicious for that. And they will extend your barbecue recipe repertoire to include dishes that you may not have thought of previously.

Mixed Fruit Kebabs

Serves: 4

Mixed fruit kebabs: mixed fruit threaded on skewers and cooked on a barbecue. A classic outdoor dessert.
Ingredients:

2 nectarines, halved and pitted
2 kiwi fruit, peeled and quartered
4 red plums, halved and pitted
1 mango, peeled, halved and pitted
2 bananas, peeled and sliced into thick rounds
8 strawberries, hulled
1 tbsp clear honey
3 tbsp Cointreau (or orange juice)

Method:

Halve the nectarine halves in half again and place in a large, shallow, dish. Cut the mango flesh into chunks and add to the dish with the kiwi fruit, plums, bananas and strawberries.

Mix together the honey and Cointreau in a small jug then pour over the fruit and toss lightly to coat. Cover and set aside to marinate in the refrigerator for at least 1 hour.

Pre-heat your barbecue and when hot drain the fruit (reserve the marinade). Thread the fruit onto 8 long skewers that have been soaked in a bowl of water for at least 30 minutes.

To cook, place the fruit skewers over medium-hot coals and cook, turning frequently and brushing with the reserved marinade until heated through and nicely coloured (about 6 minutes).

Serve immediately.
