Chocolate Brownies Recipe

The chocolate brownie is the classic traybake recipe. Beloved of young and old it's as easy to make as it is tasty to eat. Delight all your friends and neighbours with this classic baking recipe.


Chocolate Brownies

Serves: 12–15
Stach of chocolate brownies dusted with icing sugar

Ingredients:

100g (2/3 cup) plain flour
50g (1/3 cup) cocoa powder
125g (5 oz) plain chocolate, broken into pieces
250g (1 1/4 cups) butter
325g (1/3 lb) golden caster sugar
4 medium eggs, beaten
50g (2 oz) pistachio nuts, roughly chopped
icing sugar for dusting

Method:

Sift together the flour and cocoa powder into a small bowl.

Combine the chocolate and butter in a heatproof bowl and melt either in a microwave or over a pan of barely-simmering mixture. When the mixture is smooth take off the heat then place the sugar in a large glass bowl and pour over the chocolate and butter mixture.

Gradually add the eggs, beating thoroughly to combine then add the flour and cocoa mix. Stir in the nuts until well combined then turn the batter into a greased rectangular tin (about 28 x 18 x 3cm [11 x 7 x 1 in]), the base of which has been lined with parchment paper.

Transfer to the centre of an oven pre-heated to 160ºC (320ºF, Gas Mark 4) and bake for 40 minutes.

Remove from the oven and allow to cool in the tin then turn out onto a chopping block and cut into squares. Dust with icing sugar and serve.
