Aromatic Cod Recipe

A very simple to prepare cod dish that is remarkably tasty. Fish recipes are ideal if you are in a hurry, as fish need to be treated gently and not over cooked.

Here a traditional Indian recipe is adapted for European style fish and cookery. Cod steaks are cooked in a lightly-spiced yoghurt and parsley sauce on a bed of onions. This ensures that the fish is succulent and cooked all the way through.


Aromatic Cod

Serves: 4
Aromatic cod: Cod steaks cooked in spiced yoghurt served with new potatoes, carrots and greens

Ingredients:

1 tsp oil
2 onions, thinly sliced
4 cod steaks
250g (1 cup) yoghurt
4 tbsp fresh parsley, chopped
1/2 tsp cayenne pepper
2 tsp ground cinnamon
2 tsp ground cumin

Method:

Brush an oven-proof dish that is suitable for serving with the oil then sprinkle half the onions over its base.

Wash the cod steaks and pat dry then arrange on top of the onions. In a bowl, beat together the yoghurt, parsley, cayenne pepper, cinnamon and cumin. Stir in the remaining onions then spoon this mixture over the cod. Set aside to marinate for 10 minutes.

Cover the dish with kitchen foil then transfer to an oven pre-heated to 200ºC (400ºF, Gas Mark 6) and bake for 20 minutes. Remove the foil and bake for 6 minutes more.

Serve hot, accompanied by boiled new potatoes, cabbage and carrots.

In essence, with its blend of European ingredients and Indian cooking style this is a classic fusion recipe.
