Spiced Eve's Pudding Recipe

Eve's pudding is a classic dessert of an apple base with either a batter or a sponge topping.

This version spices the apples with cinnamon and bakes them with a classic sponge topping that is light and fluffy.

This is a great dessert, served hot with custard.


Spiced Eve's Pudding

Serves: 6-8

Ingredients:

For the Filling:

675g (1 1/2 lbs) cooking apples, peeled and cored
50g (1/4 cup) sugar
1 tsp ground cinnamon

For the Sponge:

100g (3 1/2 oz) self-raising flour
1 tsp baking powder
100g (3 1/2 oz) butter
100g (3 1/2 oz) caster sugar
2 medium eggs, beaten

Method:

Thinly slices the apples and layer in the base of a greased 1 1/2l (6 cup) ovenproof dish. Scatter sugar and cinnamon over each layer as you add them. Set aside as you prepare the sponge.

For the sponge, sift together the flour and baking powder into a large bowl. Add the butter, sugar and eggs then cream together with an electric whisk for a few minutes, until light and fluffy.

Spoon the sponge mix evenly over the apples, ensuring that they are completely covered. Transfer to an oven pre-heated to 180ºC (350ºF, Gas Mark 6) and bake for about 40 minutes, or until the sponge is golden brown and firm to the touch.

Serve hot, accompanied by custard.
