Pears in Cider Recipe

I've already published a pears in perry (pear cider) recipe on this blog. Today's recipe is a kind of adjunct to that dish. A dessert of pears cooked in cider that's adapted to be prepared quickly in a pressure cooker.

Pears in Cider

Serves: 4
Pears poached in cider in a pressure cooker served upright in a glass dish.

Ingredients:

4 pears, peeled
1 tbsp lemon juice
1 tbsp honey
1 tbsp redcurrant jelly
300ml (1 1/4 cups) cider

Method:

Stand the pears upright in the base of your pressure cooker. Mix together the remaining ingredients in a bowl then pour over the pears.

Secure the lid on your cooker then bring to pressure over high heat. Reduce the heat to stabilize the pressure and cook for about 6 minutes (but if the pears are particularly large or particularly firm cook for about 3 or 4 minutes more).

Allow the pressure to reduce naturally at room temperature then remove the lid, take out the pears and arrange in a glass serving dish. Pour over the sauce and set aside to cool.

Chill the pears in the refrigerator for at least 3 hours before serving. Serve accompanied by cream or ice cream.
