Baked Haddock in Crème Fraîche Recipe

This is a classic recipe for a simple to prepare dish of haddock that's baked and served in a crème fraîche sauce.

Though this is a quick and easy recipe, it works well for family meals as it's filling and the flavours are subtle, meaning that kids will like it.


Baked Haddock in Crème Fraîche

Serves: 4
Baked haddock with a crème fraîche dressing

Ingredients

15g (1/2 oz) butter
6 tbsp milk
4 medium fillets of smoked haddock
6 spring onions, finely chopped
250ml (1 cup) crème fraîche
8 blades of chives, snipped

Method:

Melt the butter in a pan, add the milk and stir to combine. Take off the heat and pour into a baking dish then swirl the mixture around to cover the base.

Cut the haddock fillets in half and sit in the dish. Now mix the spring onions, crème fraîche and chives together in a bowl. Spoon this mixture over the haddock then cover the dish with foil.

Transfer to an oven pre-heated to 190ºC (380ºF, Gas Mark 7) and bake for between 20 and 25 minutes, or until the fish is tender and flakes easily with a fork.

Serve hot, accompanied by boiled potatoes and the crème fraîche sauce.
