Pressure Cooker Rich Chicken Broth Recipe

Ever had a left over chicken or turkey carcass and wondered what to do with it? Well, this recipe gives you the answer.

With the aid of your pressure cooker you can turn those leftovers into a rich chicken broth that can be used as the base for a whole host of other recipes and dishes.

Economical and quick, this is a recipe that everyone should know.

The broth is also sufficiently strong that it can be served immediately as a soup, if desired.


Pressure Cooker Rich Chicken Broth

Serves: 4

Ingredients:

1 chicken carcass
1 potato
1 onion
1 carrot
1 celery stick, sliced
pinch of mixed, dried, herbs
600ml (2 1/2 cups) water
salt and freshly-ground black pepper, to taste
600ml (2 1/2 cups) whole milk
1 tbsp fresh parsley, chopped

Method:

Strip off all the meat from the carcass and set aside. Set the vegetables in your pressure cooker's steamer basket. Place the chicken carcass, herbs, water, salt and black pepper in the pressure cooker and sit the vegetables on top. Seal the pressure cooker securely, bring to full pressure over high heat then reduce the heat to stabilize the pressure.

Cook for 20 minutes then take off the heat and set under a cold running tap to reduce the pressure quickly. Open the lid and take out the steamer basket. Turn the vegetables into a bowl and mash with a fork.

Strain the stock in the base into a bowl then return to the cooker with the vegetables. Add the reserved chicken meat and the milk then sprinkle over the parsley and bring just to a boil.

Divide between warmed soup bowls and serve immediately, accompanied by warm, crusty, bread.
