Iced Valentine Biscuits Recipe

It may be a little late for Valentine's day this year, but it's never too late to say 'I love you'. So, I offer the recipe for these classic Biscuits in that spirit.

And just because these are designed for Valentines' day, does not mean that you have to produce them that way. Why not cut them out in tree shapes for Christmas, or as pumpkins or cats for Halloween. Basically, you can shape and decorate the biscuits as you wish.

Iced Valentine Biscuits

Makes: 24

Ingredients:

250g (2 cups) plain flour
175g (1 3/4 cups) butter
100g soft brown sugar

For the Icing:
1 batch quality glacé icing
pink food colouring (or green or orange, depending on the season)
sprinkles, for decoration

Method:

Place the flour in a mixing bowl. Dice the butter then rub into the flour until the mixture resembles breadcrumbs. Stir in the sugar then knead the ingredients together until they form a firm dough.

Turn the dough onto a floured work surface and roll out to about 5mm (1/5 in) thick. Use pastry cutters to cut out to the desired shapes (hearts for Valentine, trees for Christmas, pumpkins for Halloween etc).

Arrange on two lightly-greased baking trays then transfer to an oven pre-heated to 160ºC (320ºF, Gas Mark 4) and bake for between 8 and 10 minutes, or until cooked through and golden brown.

Transfer to a wire rack to cool then decorate as desired with the icing and sprinkles.
