Clams in Black Bean Sauce Recipe

With Chinese New Year only two days away (it's on Sunday February 10th this year). I have decided to expand my selection of Chinese dishes on this blog. As a result, there will be two classic Chinese dishes published today, two more tomorrow and a final recipe on Sunday.

Today's recipe is for a classic shellfish dish, clams served in a spicy black bean sauce.

Easy to make but truly delicious.

By combining this recipe with any of the others linked below you have everything you need to produce your very own Chinese banquet for Chinese New Year at home.

Clams in Black Bean Sauce

Serves: 4

Ingredients:

900g (2 lbs) small clams
1 tbsp groundnut oil
1 tsp fresh ginger, finely chopped
1 tsp garlic, very finely chopped
1 tbsp fermented black beans, rinsed and coarsely chopped
2 tsp Shaoxing rice wine (or dry sherry)
1 tsp spring onions, finely chopped
1 tsp salt (or to taste)

Method:

Wash and scrub the clams thoroughly then place in a large bowl of fresh water to soak until needed.

Pre-heat you wok then add the oil and use to stir-fry the ginger and garlic for a minute, or until aromatic. Add the black beans and cook for 1 minute more.

Drain the clams, add to the wok with the rice wine and stir-fry over high heat for 2 minutes. Cover the wok and cook for 3 minutes more then add the spring onions and season to taste with salt.

Serve immediately.
