Today's recipe is for a classic shellfish dish, clams served in a spicy black bean sauce.
Easy to make but truly delicious.

Clams in Black Bean Sauce
Serves: 4Ingredients:
900g (2 lbs) small clams1 tbsp groundnut oil
1 tsp fresh ginger, finely chopped
1 tsp garlic, very finely chopped
1 tbsp fermented black beans, rinsed and coarsely chopped
2 tsp Shaoxing rice wine (or dry sherry)
1 tsp spring onions, finely chopped
1 tsp salt (or to taste)
Method:
Wash and scrub the clams thoroughly then place in a large bowl of fresh water to soak until needed.Pre-heat you wok then add the oil and use to stir-fry the ginger and garlic for a minute, or until aromatic. Add the black beans and cook for 1 minute more.
Drain the clams, add to the wok with the rice wine and stir-fry over high heat for 2 minutes. Cover the wok and cook for 3 minutes more then add the spring onions and season to taste with salt.
Serve immediately.
