Crockpot Beef Curry Recipe

This is a classic Anglo-Indian-style beef curry (with cooking apples as the acid base) that's adapted to be cooked in a crockpot (slow cooker), the most energy efficient method of cookery.

Crockpot Beef Curry Recipe
Serves: 6 to 8

Ingredients:
1kg beef, cut into 3cm cubes

75g plain flour
1 tbsp Curry powder
2 Garlic cloves, minced
90g Raisins
2 tart eating Apples, peeled, cored and sliced
100g Diced onion
2 tsp Salt
1/2  tsp freshly-ground black pepper
400ml Beef stock
2 cooking Apples, unpeeled, cored, and finely chopped



Method:

Mix flour and curry powder on a large plate. Add the beef and toss to coat with the flour mixture.

Transfer the meat to a crock-pot (slow cooker) then add the garlic, raisins, sliced apples, onion, salt and pepper.

Pour in the beef stock and stir to blend. Cover and cook on the LOW setting for 8 to 10 hours or until meat is tender. Before serving, stir in additional curry powder to taste (up to 1
tablespoon) and the chopped apples.

Serve hot on a bed of rice.
